Yummy Home Baked Granola

Granola is undoubtedly a classic health food, but the crispy mealtime staple is best made at home sans the extra sugar. This home-produced granola is much tastier and healthier than any granola sought from the store. It is a more wholesome option, since it’s prepared with whole grains, unprocessed oil, nuts, dried fruits like berries and to top it all naturally sweetened with honey/maple sugar. The best part is you can freeze the extra batches for munching later.
Ingredients:
4 cups oats
¼ teaspoon cinnamon powder
Pinch of salt
1 1/2 cups grated coconut
1/4 cup sesame seeds
¼ cup chopped assorted nuts (walnuts, almonds and pistachio)
1/2 cup honey
1/4 cup coconut oil
Saffron strands 3-4 steeped in hot water for 4 hours

Cooking Instructions

1. Place a shelf in the center of the oven and preheat to 200°F. Grease a baking sheet with cooking oil.
2. Mix together the oats, cinnamon powder, assorted nuts, grated coconut, sesame seeds in an extra large bowl.
3. In a separate bowl, mix honey and coconut oil. And add the dry ingredients to the bowl and toss them up together. Add the water with the saffron flavour gradually. Pour the mix onto the baking sheet and spread it out evenly.
4. Bake for approximately 1 hour 30 minutes and turn off the heat and toss the mixture after every quarter. The granola will be much crispier/ crunchier once cool. Once done, remove the preparation from the oven and allow it to completely cool. Transfer the granola to an air tight box and refrigerate for good 3-4 months.
