Red – Green Soup – Tomato/Spinach
This is a very healthful and piquant blend for a starter.
Ingredients –
1 cup of tomato juice
1 cup of spinach juice
2 teaspoons of unsalted butter
½ cup of vegetable or chicken stock
A bunch of freshly chopped parsley
½ cup of scallion –chopped finely
Salt and pepper to taste
Method –
Put the butter into a non-stick saucepan. Set the heat to medium.
Next add all the ingredients.
Bring to a boil while stirring occasionally. Reduce the heat and allow it to simmer for 10 minutes before serving hot.
Serves 2

Coriander –Carrot Soup

Ingredients –

2 tablespoons butter
2 tablespoons vegetable oil
2 large red onions, chopped finely
4 cloves of garlic, minced finely
2 cups of fine red carrot juice
A big bunch of fresh coriander leaves, chopped.
½ tablespoon soy sauce
2 cups of vegetable or chicken stock
Salt and pepper to taste

Method of preparation –
Heat the oil along with butter in skillet.
Add onion and garlic, sauté until onions are a nice pink in color.
Add carrot juice and allow the mix to simmer for at least 20 minutes.
Add soy sauce and coriander.
Once done, transfer the mix into a blender and blitz until the mix is smooth.
Add the vegetable or chicken stock and blend freshly.
Pour back the mix into the skillet and allow it to cook for another 3 minutes until soup comes to a boil.
Serve hot.
